Temp sensors and fans

I'm guessing this is a temperature sensor in this pic of Chris Wood's MR2:

My question is, what does it control?

I've yet to bleed the air from my cooling system properly, since I've yet to sort the pipe from hell (will do after that). Thinking of manual switch override for the fan under the bonnet, as it only comes on for about 10 seconds then goes off (wierd).

That's the stock temp switch for the engine bay fan, it normally runs via the cooling fan relay, all of which is buried in your original Mr2 engine harness and is now redundant.
